Roast Potatoes & Sauteed Mushrooms

This may look like a plain ol' dish but there are two things to take away from this. Number one, if you want to roast potatoes and have the skin crunchy, boil them potatoes for about 5 to 10 minutes first, then ruffle up the surface by vigorously shaking them in the pot and then only throwing them well oiled with herbs and salt into the oven.

Number two, don't crowd the mushrooms!! For 4 years of cooking, I have never properly cooked mushrooms. Now for the first time ever I am actually tasting the the mushroom. The texture, the flavour of the mushroom infused with the butter is brilliant. So yea, never crowd the mushrooms even if it means you gotta cook it in a million batches. I cooked in 2 batches this time round.
